easter bunnies

this holiday weekend was as wild and sweet and hectic and filling as any other easter yet. having tiny little phoebe bunny baby here this year made the whole holiday seem anew. max was forever thrilled to show her the ways of the easter bunny and hiding eggs and waking up before sunrise to find easter spoils.

i'm proud to say bee kept her bonnet on her head most of the day and max made it another year believing in the easter bunny and i only ate a million and a half jelly beans. not too shabby if you don't take into account the dozens of boiled eggs for deviling i ruined (and the one i crushed with my bare hands during a private temper tantrum..haha. ack!) i shake my fists at you boiled eggs...oh how peeling you without ripping you to shreds confounds me!!!

hoping you all had a lovely and sunshiny and tantrum-free easter!

  1. If you fill the pot the eggs were boiling in with ice cold water when they are done, then peel the eggs under the water about 10 minutes later, they slip almost right off! I did this yesterday. Worth a shot to try next time :) Hope that helps! Adorable photos!

    1. the cold water bath after boiling is my downfall every time! haha. i let them sit too long i think. i'll definitely try the 10 minute limit for them.

  4. aw, Katie! Looks like everyone had a happy (itchy clothes free) holiday. I've so loved watching your little family grow here. As she gets older, Phoebe has such a clever look about her! She's going to be a bright one.

  5. Your photographs always blow me away. Beautiful!
p.s. I bought that same little sweater-- BabyGap?-- for my little *boy* to wear for Easter and also some family shots we had done over the weekend. I crossed my fingers that my husband wouldn't think it was too girly : )

  10. Beautiful photos, as always. My trick for the eggs is you can't use NEW eggs. They need to sit around in the fridge for a bit. We eat a lot of hard boiled eggs around here, so I always buy 2 cartons at a time so by the time I'm getting around to the second carton, they have sat long enough to be peeled with ease. I've never tried the cold water bath?!

  14. If the eggs were fresh laid, or even a week or so since being laid, they will pretty much never peal easily. My mum has chickens and the number of times we've tried every trick to get them to peel clean only to have clumps come off... Oh man, I feel your pain!

The bunny masks really makes me smile!

  17. Fresh eggs seem harder to peel than older ones. I get fresh eggs from my co-worker's chickens and I always have a harder time peeling them than when I buy them in the grocery store.

P.S. I think it's awesome that you admitted to crushing one. In your pictures you always seem so poised. It's nice to know you are human. HAHAHA

  19. I always hear the same thing as above, that fresh eggs are impossible to peel. I make deviled eggs for every social function (my first orphan Thanksgiving in NYC, my friends were like "that's weird, why do you want to bring deviled eggs, that's so grandma of you" and of course, they were eaten in five seconds) and I always intend to buy a couple dozen a week or two in advance but do I ever actually do so? No! And then I end up almost ripping my hair out trying to peel them. But, it's always worth it. Yum.

Your family is so lovely and fun, by the way. Love it.

  20. That picture of toothy smiley Bee KILLS me! So adorable.

I used to work in a cafe where I would have to peel hard-boiled eggs every day and there is a trick my Russian co-worker taught me- always put a ton of salt in with the eggs while they boil! The more salt, the easier they peel. Then straight to the cold water bath where you can leave them as long as you like. As long as there is salt in the water, the shells will literally come off in one giant piece. Works like a charm every time!

    1. salt!! i wish i had known! i've read about the fresh vs. shelved eggs and wondered what a gal's supposed to do if you're deviling on the fly..haha. it's good to know i can buy them fresh and salt that water to avoid a potential meltdown. haha.

      fingers crossed!

    2. I'm surprised more people don't know the salt trick! Even if you think you've poured too much, you haven't. It takes lots and lots. But the satisfaction of peeling the whole shell off in one motion is the best! It's the little victories.

  24. My grandmother always told me to roll the egg around a little, cracking it's shell, and then to run it under some cold water to help the shell lift off. It's always worked like a charm!
